In Version 1.1 the main beat is not mapped to number keys anymore. It is now chosen via quicktime player. The controls of Quicktime Player can be used to mainpulate the speed, pitch, volume etc. of the beat.
1 When you choose to start a performance, you are prompted to find a soundfile
(mp3, wav, anything that quicktime player can play is fine there is a sample
file made of Mac alert sound effects here).

2 & 3 If you are the one starting the performance, you get more controls
than everyone else. For example, you can press CTRL to have the quicktime
player A/V Control window pop up.
The pictograms should more or less explain Instrument usage.
The mouse maraca sounds can be changed by clicking the left mouse button.
The right mousebutton can be used to turn on the internal microphone - but
only by the one who started the performance.
The joystick maraca sounds can be changed by pressing joystick buttons (1-3)
